Chef Kerry Simon’s new restaurant, KGB, opens thursday at Harrah’s in Las Vegas. Chef Simon beat Cat Cora in the Iron Chef battle, hamburger. His newest venture KGB (an initialism for Kerry’s Gourmet Burgers) capitalizes on his victory and the KGB (the other one:Комитет государственной безопасности )motif. Max recently asked Chef Simon for a few tips.
Use a cold patty. Don’t smash the meat when cooking.
Use a high quality product. We use prime in our burgers.
The grind is important.
Use a fresh, artisanal bun.
Don’t overcook the meat.
Chef Simon refused to answer any questions on meat ratios or grinds, even when we used our best interrogation techniques. The end result, however, was rather tasty.
