Now that it is Springtime in Las Vegas, our thoughts turn to the birds and the bees. The birds are for another article.  So let’s talk about the bees.

BeeRaw honey is single varietal honey, meaning honey produced from a single source. The result is a series of honeys that are significantly different in flavor. Many of these honeys ‘pick up’ flavors from the source; orange blossom honey has a definite orange taste, for example.

Perfect for teas or general use, the BeeRaw honeys are high quality and an excellent addition for a variety of culinary purposes.

Bee Raw has been making raw and unfiltered honey since 1999. Due to the nature of this honey, some crystallization may result. Simply warm the honey until clarity is restored. From $12 per jar.  Available at UNICAHOME, of course.

Some of the following honeys are fairly rare, and limited stock is available.

Basswood Honey

Warm herbal notes, the honey is light. From new york. Pairs well with fresh green apples, fromage blanc and vanilla ice cream. A great accent to mint and spice teas.

Blueberry Honey

This blueberry honey, produced in Maine, is a medium amber honey with strong and sweet flavor and earthy components. Great with creme fraiche, ginger, lemon, melons, nutmeg, sour cream, walnuts and yogurt.

Buckwheat Honey

A dark brown honey, buckwheat is a stout and complex honey. It can be compared to other sweeteners such as sorghum or molasses. Hints of mossy earth, and a not-so-sweet composition combine to develop a malty flavour with a pronounced bright finish.
Buckwheat honey pairs well with any strong cheese [especially blue varietal cheeses], with grapefruit [as a palate cleanser], over spicy chilli, mixed with butter and cornbread, oatmeal, or anything maple syrup would be used on. Great with barbecue sauce, too.

Cranberry Honey

Medium amber in color with a slight cranberry aroma, this cranberry honey (from Wisconsin) is excellent with dark chocolates or chamomile tea.

Orange Blossom Honey

A classic American honey from Florida, the orange blossom honey has hints of citrus flavor. A versatile honey that can be used in a variety of culinary applications. great for baking ham, making salad dressings, served over ice cream or brie, and as an accent to fruit salad, crumpets or scones. The floral orange component lends itself to being paired with chocolate, cinnamon, custards, fennel, mint, salad greens, seafood, winter greens and vanilla.
Perfect for English breakfast, ceylon and chai teas. Use it to make the best summer lemonades. mix lemon juice and honey together first, then add water and chill.

Sage Honey

A honey from California, this sage honey has a touch of spiciness. One of our favorites, the honey pairs well with rosemary, game, veal, prosciutto – and is a standard accompaniment to Parmesan or Manchego cheeses.

Sourwood Honey

Sourwood honey is from the Blue Ridge Mountains. Lightly floral and rich in flavor, the honey definitely has some sour notes. Great with asian foods, southern barbecue sauces and stong teas, such as gunpowder.

Star Thistle Honey

Just one look at this honey and you know you are in for a treat. Thick and creamy, with a long, sweet finish. From Colorado.

Wild Raspberry Honey

Mellow and smooth on the palate, this honey is great with English Breakfast and Earl Grey tea, as well as fruit and champagne. From Maine.

Yellow Clover Honey

Light, delicate, and sweet. From Colorado. Great with feta cheese, chevre or phyllo pastry.
