Matzo brittle is a bit of a legend among those with a sweet tooth at Passover, it turns sheets of matzo, the hard flatbread made of white flour, into something a little decadent. But what started as a fairly basic dessert has, with the help of many food bloggers, evolved into something more.
The core recipe is simple and similar to other brittle recipes. You lay out matzo on an aluminum-foil-lined baking sheet. Then combine two sticks of butter or margarine with a cup of brown sugar in a saucepan on the stove. When the butter and sugar boil, you pour that over the matzo and pop the baking sheet in a 400-degree oven for around ten minutes. After it comes out of the oven you spread chocolate chips over the caramelized matzo. While most recipes I’ve seen call for semisweet chocolate there’s no reason to stop there. You can also use white chocolate or milk chocolate. But it’s as the chocolate begins to melt that the fun begins because you can customize your brittle in a variety ways. Glomming on to the salted caramel trend, the addition of fleur de sel is particularly popular lately. Nuts are also a classic topping. Sprinkle on whatever flavor you’d like as the chocolate cools and once the brittle is hard it can be sliced or broken into serving sizes.
How wild can you get? I’ve seen bacon-topped matzo which rather defeats the principle of having it as a Passover dessert (although other recipes call for using saltine crackers in place of matzo). Other variations include adding a touch of smoky heat in the form of chipotle pepper. Any flavor that might work with other chocolates can be easily adapted to this brittle making Passover dessert worth waiting for.
