Unicahome has been following the resurgence of cocktail culture for some time. The best cocktails, like any great food, require the best ingredients to really shine.
Recently Daniel Singer of Filthy Food sat down with us to discuss the line of Filthy Drink Garnishes. Part tongue in cheek and all quality, the line re-evaluates the role of the garnish for drinks and food and significantly raises the bar versus other products in the marketplace.
“Bartenders appreciate the effort we’ve gone to give them something to elevate the cocktail,” explains Mr. Singer. Garnishes are supposed to elevate the cocktail. They are supposed to add something: color, flavor or decoration. In the past, however, garnishes have actually detracted from the experience. We all know the oily, salty olives, for example. Good bartenders had no other choice, until now.
Filthy’s olives, for example, do not undergo the oil-based fermentation process that other drink olives go through. These olives are not made for salads- they are made for drinks. The packaging for the product is exceptional- and every olive I tried was excellent in appearance, texture and flavor. The pepper stuffed olives were hot with a heat I normally find in imported peppers. A real blast of flavor.
Filthy also makes a gherkin-stuffed olive. Singer is so fond of these he has a lapel pin that looks like the gherkin/olive combo. They look a bit like snails and have a lovely crunch, taste, and tecture. When I asked Daniel how they stuffed the olives he was more than ready with the secret to their success.
“First we take a clean stainless steel table and lay a clean, white sheet. On one side of the table we line up the olives. On the other side, the gherkins. Then we dim the lights and play Barry White.”
I’m trying this tonight. Along with a nice dirty martini made with Filthy Olive Brine.
Singer is a true believer in his product, “Filthy is about an inclusive experience. Filthy makes things better- your night, the cocktail, the experience.”
Singer, incidentally, was an actor with the Royal Shakespeare Company.
MACDUFF: What three things does drink especially provoke?
PORTER: Marry, Sir, nose-painting, sleep, and urine. Lechery sir, it provokes and unprovokes; it provokes the desire, but it takes away the performance.
