Hyde Opens at the Bellagio

The long awaited moment has arrived. Hyde Bellagio, a partnership between the hotel, superstar chef Jose Andres, and the SBE nightclub group, has finally opened its double doors on the site that was home to Fontana Lounge since the Bellagio first opened.

This is a swank new place facing the Bellagio Fountains, with chic leather furniture, a few private rooms, and a plush bar.

Liquid Nitrogen Cocktail

The SBE Entertainment Group brings with it a formidable resume of hotels, restaurants and clubs, overseen by its CEO, entrepreneur Sam Nazarian. The group’s many holdings include the SLS Hotel in Beverly Hills, The Bazaar by Jose Andres, the Mediterranean restaurant Cleo, and many other hot properties.

Signature cocktails will include originals the Love Unit, Stolichnaya Elit Vodka mixed with Stoly Vanilla, plus Thai basil, fresh pressed lime juice, grapefruit juice and hand extracted bell pepper juice, shaken not stirred, Mr. Bond.

One more original among many is the Caribbean Snowflake, made with Cruzan Single Barrel Rum, Angostura Bitters, whipped egg white, and a number of juices. Liquid nitrogen will also play a part in frozen drinks.

Shake it Up

Food is available until 10 p.m., brought in from Osteria del Circo, a restaurant next door to the club. The menu is simple but appealing. An extensive list of chilled appetizers such as ahi tuna tartare in cones is offered, while warm dishes include pork belly sandwiches, croquettes of beef carpaccio, potato and ricotta cheese, and Kobe sliders.

Is there caviar service? You can count on it, not to mention a healthy mark up for bottle service a table. The management is savvy, local pro Oliver Wharton, who works for SBE, has been brought in to see things go smoothly initially, while the delicious Andrea Eppolito is on hand as well.

Designs that Could Have Been Purchased Locally

The best bargain here might just be the only sweet available, Circo’s delicious filled bomboloni, Italian doughnuts with Nutella, strawberry and vanilla cream fillings.
